Named for the original saint of Luni, Pope Eutychian, this ruby red blend of Sangiovese, Merlot and Ciliegiolo grapes that are picked by hand after a careful selection in vineyards in Ortonovo, Castelnuovo Magra and Sarzana. The fermentation and maceration come at controlled temperature for 15 days. The malolactic fermentation takes place in stainless steel tanks and the wine is aged for six months in bottles. Eutichiano has intense aromas of black cherry and cranberry fruits layered with smokey minerals. The taste is dry with good alcohol content, soft with substance and well polished tannins that allow it to pair well with rich meats, chicken, cheese, wild game and even bold seafood dishes.
